Why cups don’t convert to one gram number

A cup measures volume, so its weight depends on how dense the ingredient is: a cup of flour weighs 120 g, a cup of sugar 198 g and a cup of honey 336 g. The weights here come from King Arthur Baking’s ingredient weight chart, the reference most US recipe sites use, and USDA FoodData Central for rice.

Chinese flour names don’t map one-to-one: 中筋面粉 (plain flour) ≈ US all-purpose, 高筋面粉 ≈ bread flour, 低筋面粉 ≈ cake flour. For the most reliable results, weigh in grams — a $10 kitchen scale removes all of this guesswork.

FAQ

How many grams is 1 cup of flour?

1 US cup of all-purpose flour is 120 g when spooned into the cup and leveled (King Arthur Baking’s standard). Scooping straight from the bag packs it and can give 140–150 g, which is why bakers prefer weighing.

How many grams of butter is 1 cup, and what is a “stick”?

1 cup of butter = 2 sticks = 227 g (½ lb). One US stick = ½ cup = 8 tablespoons = 113 g (4 oz); the wrapper is marked in tablespoons.

Is a US cup the same as a Chinese measuring cup or a rice-cooker cup?

No. A US cup is 236.6 ml (US nutrition labels round it to 240 ml); metric cups in Australia and elsewhere are 250 ml. The small cup that comes with a rice cooker is usually 180 ml (one Japanese gō, 合), about ¾ of a US cup — use it only with the cooker’s water lines.

How many grams is a tablespoon and a teaspoon?

By volume, 1 tablespoon (tbsp) = 3 teaspoons (tsp) = 14.8 ml, and 1 tsp = 4.9 ml. In grams it depends on the ingredient: 1 tbsp of sugar ≈ 12 g, flour ≈ 7.5 g, honey ≈ 21 g, table salt ≈ 18 g; 1 tsp of baking powder ≈ 4 g, baking soda ≈ 6 g.

How do ounces, pounds and 斤 compare?

1 oz (weight) = 28.35 g, 1 lb = 16 oz = 453.6 g. 1 斤 = 500 g and 1 两 = 50 g, so 1 lb ≈ 0.91 斤 and 1 斤 ≈ 1.1 lb. A fluid ounce (fl oz) is volume: 29.6 ml.
